Escort Cossie with Ford Coyote 5.0L V8 (from the 2010 Mustang), RWD, and a widebody kit.
VVT-i / individual throttle body / variable geometry turbocharger 2JZ-GTE in a Lexus IS300.

Why would you want to put a big, heavy, thirsty V8 in a Cossie, completely unbalance the front end and remove 2 wheels worth of drive when you can tweak the standard YB motors to well over 1200bhp? It's like building a Westfield kit-car and fitting a diesel engine converted to FWD.
My contribution.
Formula 5000 chassis, hard-topped, fitted with X-trac AWD and a Tag Turbo engine. 1.5l twin turbo V6, 1560bhp. C.500kg weight. Better power to weight ratio than an F1 car.

The thread title says "interesting", not "useful" or "smart"
Also, I wrote that before I knew about the Sierra Cosworth (which is RWD anyway), and before I learned about how truly awesome the Cosworth YB engine is. Putting on a bigger turbo, switching the bottom end out for a reinforced version of the Pinto 2.3 block, getting more aggressive camshafts, etc. would be the smartest thing to do with an Escort Cosworth, in terms of performance potential; however, the fact that that's the obvious route makes it less interesting.
Also, your idea sounds utterly amazing, and it sounds like it could outpace basically any other car in existence.
Some more random ideas:
- Subaru Impreza GDB with Saab 9-2X front end and a turbocharged Legacy 3.0 flat-six.
- Nissan Cefiro A31 with an engine made out of a RB30 bottom end and an RB25DET top end, with R32 double-wishbone suspension.

Volvo 240 Estate with an RB25DES.
And that is an "S" for "Supercharged". Someone is selling this exact setup in Australia. I commend him for it.
