Weird. I use a wheel or a PS2 controller and don't have any trouble with it - maybe you should reduce the sensitivity on your joystick? You can down a tool called DXTweak2 here that allows you to do this. It's not the sensitivity, its the Most Wanted steering its more sensitive than NFSU2 and so on.
