If I add a roof scoop to my car, will it change the way it handles? Also, if I add a carbon fiber hood etc., will this improve the performance of the car, or is it just for looks? Has anyone tested this?

Every body + styling -part you put on your car is for "show".
Remember that this is an Arcade-game

But once you have a spoiler or body kit then the 'aerodynamics' bit of the performance tuning is available. Otherwise it's not adjustable. I doubt if a hood (bonnet) or 'roof scoop' would affect that but I will test it.
Generally, the styling of the car affects the heat level of the car but as with the performance parts you have a scale to go by, it could do with something similar for the aerodynamics. You can see that a new rev counter is not going to make you ride less hot as you can see that the Super Pro engine is going to make you faster, sooo …it should follow that that you can evaluate the body kit or spoiler not only on its looks (heat) but its effect on downforce.
I, personally, feel the Rims should help with handling, there is enough choice, all that choice, goodness me.
