Permanently turn off best line & stability control?

I'm using elite mode to play the game which should disable all assists & turn off the best line. However often after a restart when I've had a big crash I find that best line & stability control is turned on, both of which totally mess up my driving style & rhythm around tracks as I tend to take rather interesting lines. Is there anyway to kill them permanently?
