From a lot of different games, including NFS4, NFS5, NFSU1, and NFSU2.
Some are dual view and there's one quad view.
One video you shouldn't overlook is the Ford Racing 2, stock car on road course, it just seems to have the right amount of body roll and oversteer.
Most impressive in terms of the driver skills is Greg Stewart at Rouen in GPL, this is a dual view video, cockpit view on top, chase view on bottom, note the steering inputs it takes to keep the car undercontrol, and how often countersteering used during corner exits.
