Well, actually Jopuma got the things wrong:
Apple would definetly be for GUI and security (OSX is based on BSD and BSD systems are the most secure of them all - see http://www.openbsd.net/ - Only two remote holes in the default install, in more than 10 years!). OSX's gui was proven to be the best (there are actual benchmarks available: http://pfeifferreport.com/trends/trend_vistauif.html ).
For stability, it would be a tie there pretty much especially since winXP has become pretty stable.
As for eye candy - beleive it or not, but even Vista is far behind OSX and linux running beryl. I really suggest you download some linux live cd that has beryl included. It works awesome even on low end graphics cards!
