The original Nurburgring is 22 kilometers long, and consists of long straits and almost any corner inmaginable. 90 degree turns, hairpins, long fast corners etc etc.

Almost all car manufactors test there cars on top speed and road handeling on this track because, like Stig said, the surface of the track is similair to the normal road surface.

Are those numbers the Nordschleife, the Nordschleife + GP Strecke, or the Nordshleife + Sudschleife?

The Sudschleife has been closed many years ago.Little remains of that part of the track.

Some places still include the Sudschleife in the grand total when they list Nurburgring.
